Vegan Jambalaya


Greetings Fam Bam!

I work long hours. Recently I was looking to cook something quick and easy because quite frankly I was exhausted. I looked around in my pantry and it just came to me.... Jambalaya! This recipe is quick, easy and can be thrown together with things you have on hand.



Ingredients I used:

2 Vegan Sausages
1 cup (uncooked) rice
1 cup black beans
2 small zucchini
1 small yellow squash
1 small onion
1 carrot



Directions:

1. Cook rice according to the package instructions. I used vegetable broth to cook the rice to add more flavor to the dish.


2. Cut up sausages and cook. It is easier to cut them up if you start with them frozen.


3. Cut up the zucchini, squash, onion and carrots and sauté in little bit of EVOO.

4. Add in 1 cup of cooked black beans and any seasoning you like to use. Add in 3 Tablespoons of marina sauce or 1/2 tablespoon of tomato paste and a little broth.

5.  Take veggie mixture and sausage, and fold into cooked rice.




This recipe fed two adults and two children with no leftovers. If you have a bigger family double the proportions. Hope you enjoy!
